After Jeff Turbitt moved to Arizona his blog quickly devolved from spanking elected officials in Saipan with his Hypercritical Thoughts into Jeff Turbitt's Mind-Numbing Domestic Monotony.

I don't want that to happen to the Saipan Blog, hence my repeated reminder to the governor that he should resign.

With that said...

I sure have been cooking a lot lately.

I've been making dinner for the family almost every night. The other night I made cheeseburgers mixed with portabella mushrooms. Kevin like it so much he asked me to make it again the next night.

Last night I whipped together a great salmon dish using some scraps of food in the fridge.

herb crusted salmon with sweet potatoesI crusted a filet of salmon with some basil, oregano, and crushed black pepper and sauteed it in some butter. I served it with some mashed sweet potatoes and wilted spinach.

I made the potatoes by cooking them in the microwave and pressing the "potato" button and then mashing them with some milk and butter. For the spinach I used the left over onions and tomatoes from the cheeseburgers and cooked them with some chicken broth. Right before I served everything, I threw in the spinach.

I don't want this blog to turn into a recounting of what I have for breakfast everyday, but this dinner turned out great!
